Difficulty: Moderately Easy
Ingredients
- 1 Stick Real Butter (about 1cm thick slice from the butter block)
- 1 to 2 tbsp Fresh Minced Garlic
- 2 to 3 tbsp Cornstarch
- 240 g Real Parmesean Cheese (not powdered)
- 950 ml Heavy Whipping Cream
- Medium Saucepan
- Whisk
- Your Favorite Pasta, cooked (I prefer Angel Hair for this recipe)
- Grilled Chicken or Shrimp if you desire
Directions
- Gather all of your ingredients and prep them. Mince garlic, soften butter, open the heavy whipping cream, chop or grate cheese, start pasta cooking. This sauce needs your attention for just a few minutes, and it is best to have everything ready.
- Over low to medium heat, melt butter in pan. Add in Minced Garlic. Do this gently, so the butter and Garlic mixture does not turn brown. If you are like me, you will have to throw out the first batch, wash the pan and start over. Try not to get distracted. Burned Garlic tastes terrible! Add cornstarch to the pan, stirring with the whisk to avoid lumps. This is just like making gravy. Add in the Heavy Whipping Cream slowly, stirring all the time. Heat the cream through, while gently stirring. Add in all of the cheese, stirring to melt it into the sauce.
- You are now ready to serve dinner. Pour sauce liberally over cooked pasta, top with chicken or shrimp if desired. Adding a salad and bread will make the meal complete.
- Be sure to use a silicone covered whisk if your pan has a non-stick coating.
- Half and Half can be used in place of Heavy Whipping Cream if you want to cut the fat down, but margarine will not be a good substitute in this recipe.
- Keep your burner turned down low to avoid burning the garlic and butter.
